Cognac and Brandy

Cognac, is the most famous spirits in the world for centuries. Cognac is a eau-de-vie made from wine (grapes wine) produced in France and especially in Charente. Protected by a Appellation d’Origine Contrôlée (AOC) since 1936, Cognac is divided into six sub-types to better promote the distinct terroirs: Grande Champagne, Petite Champagne, Borderies, Fins Bois, Bons Bois and Bois Ordinaire.. A sixth sub-appellation, Fine Champagne, designates assemblages of Petite Champagne and Grande Champagne. Distilled in stills, Cognac is today essentially a blend of alcohol that seeks to express the finesse and elegance of its base wines. It comes in three denominations that depend on aging time, including XO cognac (extra old), VSOP (Very Superior Old Pale) and VS (Very Special).
