Initially a team leader in the sugar plantation, Papa Isio – healer, shaman, seer, rebel and leader of the Babaylanes group, played a key role during the second half of the nineteenth century and the Philippine Revolution. Rum and Papa Isio played a crucial role during the liberation of the Negros from Spanish rule, leading to the independence of this beloved country. A bit of history: The beginnings of Don Papa and the genesis of Philippine rum

At the origins of the brand is Stephen Carroll, former marketing director of the French group Rémy Cointreau, who decided to create his rum company in the Philippines: the Bleeding Heart Rum Company. The production of these exceptional rums is done at the foot of Mount Kanlaon, at the Bago distillery, located on the island of Negros, entirely dedicated to the cultivation of sugarcane and rum production, nicknamed Sugarlandia. Indeed, the Philippines is one of the historical cradles of sugarcane and is now among the top 10 largest producers in the world.

The famous 7-year-old

The Baroko and Masskara cuvées

Rye Cask

For this new creation, Don Papa decided to let its rum mature in former Rye Whiskey barrels for 4 years. The Don Papa Rye Cask rum perfectly fuses the Philippines with the banks of the Mississippi.

Sevillana

The Don Papa Sevillana rum is a variant of the Don Papa 7-year-old, which benefited from an additional 36-month finishing in two types of Spanish casks: those that contained Oloroso Sherry and, more uniquely, those that contained Andalusian Orange Wine. The latter was originally an orange wine, a regional specialty of Seville.

The Don Papa Sevillana is very rare and therefore difficult to obtain, but we have arranged 60ml samples to taste and form an opinion.

10 years

The Don Papa 10-year-old, resulting from ten years of aging in lightly toasted American oak barrels, presents more complex and profound aromas than its younger brother.

Sherry Casks

Don Papa Sherry Casks matured for several years in American oak bourbon barrels. It then enjoys an 18-month finishing in four distinct varieties of sherry barrels: Fino, Pedro Ximenez, Cream, and Palo Cortado.
