Since 1887, the production of the prestigious Rhum Clément has been done in the purest tradition according to the rules and production techniques inherited from Homer and Charles Clément .
Clément agricultural rum is a natural product resulting from the direct distillation of pure cane juice in strict compliance with the new rules of Appellation d'Origine Contrôlée (AOC). The agricultural white rum is stored after distillation for a minimum of three months in stainless steel tanks where it is brewed so that it rests, oxygenates and eliminates certain volatile substances. This slow preparation work, which can be spread over eight months, allows the rum to balance and obtain a roundness in the mouth as well as a greater aromatic intensity. Aged three, six or ten years, vintages or blended in special vintages, Clément old rums are made by the cellar master at Habitation Clément. The rules of the Appellation d'Origine Contrôlée stipulating that Martinique's agricultural rum must stay for at least three years in barrels to qualify for the name of old rum and the development of its consumption over the past 10 years have led to the construction of several cellars at the Habitation Clément since 1996. Today, these cellars house more than a million liters of rums that age patiently in oak barrels, taking care of the aromatic and coloring substances of the wood that gives them all their character, before being marketed.
