Since 1887, the production of the prestigious Rhum Clément has been done in the purest tradition according to the rules and production techniques inherited from Homer and Charles Clément .

Clément Agricultural Rum is a natural product resulting from the direct distillation of pure cane juice in strict compliance with the new Appellation d'Origine Contrôlée (AOC) rules. The white agricultural rum is stored after distillation for a minimum of three months in stainless steel tanks where it is brewed so that it rests, oxygenates and removes certain volatile substances. This slow preparation work, which can take up to eight months, allows the rum to balance out and obtain a roundness in the mouth as well as a greater aromatic intensity. Aged for three, six or ten years, vintage or blended into special vintages, the old Clément rums are made by the cellar master at the Habitation Clément.

Rums Clément and the Martinique AOC

The rules of the Appellation d'Origine Contrôlée stipulating that Martinique's agricultural rum must remain for at least three years in barrels to qualify for the designation of old rum and the development of its consumption over the past 10 years have led to the construction of several cellars at the Habitation Clément since 1996. Today, these cellars house more than a million litres of rums that age patiently in oak barrels, taking on the aromatic and colouring substances of the wood that give them all their character, before being marketed.

In 1991, Habitation Clément in Martinique hosted Presidents François Mitterrand and George Bush Sr. during a Franco-American summit.
