We hardly think of Paraguay when we think of rum, including latino rum. And yet, it is well on the gigantic map of rum. A major producer of organic sugar cane, Paraguay supplies its small sugar refineries and distilleries which produce “cana paraguaya”, the local name for cane eau-de-vie. Yes, eau-de-vie because unlike rum which in the European Union must be at least 37.5°, “cana paraguaya” can be bottled at 35 °. Rum can be produced from pure cane juice or molasses. In addition to independent bottlers like "Fair" who can select rums in this country where there is an ethics of sugar cane, the Fortin brand represents today this territory beyond its borders.
