Inspired by the terroir of Mont-Saint-Michel, this recipe incorporates salt-meadow lamb jus, spiced up with wild samphire and black garlic, on a base of white agricultural rum. The whole is softened by honey, brown cane sugar and carefully selected spices, then refined in old peated whisky casks for a powerful and singular aromatic signature.
