Bearing the characteristics of the original Bundabergrum, Underproof delivers an intense character, although it is sweet. Aged in the fertile soil, the most beautiful sugar cane is sent to be crushed at Bundaberg Sugar Mill, not far from the distillery. Very rich, sweet molasses is produced, fermented, distilled twice and then enclosed to age in oak barrels still handmade today by a family of coopers.
