Mount Gay Sherry Cask is a blend of rums aged for 20 years in ex-American whiskey casks. Thanks to the heat and humidity of Barbados, the intense aromas of burnt oak and toasted vanilla are accentuated. In order to add a level of aromatic complexity, the liquid is aged for an additional year in Pedro Ximenez Sherry wine barrels. This process adds roundness to the mix, aromas of candied fruit, black cherry and plum, with notes of nuts.
