Shaking is an essential technique in mixology. It helps to homogenize the ingredients, chill the drink, and incorporate air to achieve a lighter texture and a nice foam. However, not all shaking techniques are equal, and each has its own specific characteristics.
Image illustrating the different types of shakers used in mixology. From the Boston shaker, favored by bartenders for its speed, to the Cobbler shaker, ideal for amateurs thanks to its built-in strainer, and the French shaker, elegant and refined, each model has its own specific features. There's also the Tin on Tin, a favorite among professionals for its powerful shake, and the Speedshaker, perfect for ultra-fast preparations. Choosing the right shaker is already a step toward a successful cocktail!

↣ Ice cubes
↣ Cocktail strainer
Fill the shaker with ice cubes.
Add the ingredients.
Shake vigorously with a fluid up-and-down motion for 10 to 15 seconds.
• Efficient and quick cooling
• Good dilution, ideal for cocktails with juices and syrups
• Easy to perform for beginners
Can sometimes be too aggressive and alter the cocktail’s texture
Less control over dilution level
↣ Metal shaker (ideally a Cobbler shaker)
↣ Large ice cubes
Add ingredients and ice cubes into the shaker.
Perform a fluid three-step movement in a "figure 8" to create a swirling effect.
Shake for about 15 seconds for a smooth texture.
• Provides a finer, more aerated texture
• More precise dilution control
• Ideal for sophisticated cocktails
• Difficult technique to master
• Requires a high-quality shaker for optimal results
↣ Boston shaker
↣ Ice cubes
↣ Fine strainer
Shake once with ice for about 10 seconds.
Strain and remove the ice.
Shake again without ice to create a smoother froth.
• Ensures perfect emulsification of egg whites
• Creates a creamier, more homogeneous texture
• Ideal for cocktails like the Rum Sour or Ramos Gin Fizz
• Requires more time and effort
• Can result in overly dense foam if done incorrectly
↣ Boston shaker
Add all ingredients except ice.
Shake vigorously for about 10 seconds to incorporate air.
Add ice and shake again to chill the mixture.
• Excellent method for integrating egg whites without altering temperature
• Faster than the reverse dry shake
• Less controlled dilution than with the reverse dry shake
• Less effective for achieving a voluminous froth
The choice of shaking technique depends on the type of cocktail you want to prepare and the desired result in terms of texture and dilution. Whether you are a beginner or a professional, experimenting with these different methods will help you refine your craft and enhance the quality of your cocktails!
