Where to taste a rum-based cocktail in Madrid ?

The capital of Spain is attracting more and more mixologists, and for good reason. You will find plenty of places to have a drink. The nightlife is vibrant. We set out in search of the best establishments to enjoy a rum-based cocktail.

1862 Dry Bar

Here is a must-visit bar! In an atmosphere borrowing from classicism, the 19th-century bar, and prohibition, you are warmly welcomed. While a few tourists can be found, Spanish is predominantly spoken. This bar works with all spirits, from rum, vodka, gin, and especially whisky. You sit wherever you can, no fuss. For us, due to lack of space, we were seated on a sideboard... after all, why not!

In terms of rum, we found Paranubes, Clairin, Worthy Park, Hampden, Mount Gay and paradoxically few Latin rums despite a Santa Teresa that stood out amongst its peers.

We tested the Voodoo Grog for you, composed of clairin, Jamaican rum, lime, orange, passion fruit, honey, chili, and egg white, a complete menu! It was very good, rather dry, with a bitter touch and another, acidic, well fruity and fresh. It was an original and good cocktail.

We then moved on to the Old Money, made with pure cane juice rum from Mexico, banana liqueur, lime, and Fernet Blanca. The barwoman warned us that it was a rum agricole "for those with experience". She was referring to Paranubes. This delicacy shows, if it needed to be demonstrated, that pure cane juice rum is not really popular in the Spanish capital. This cocktail is just as dry as it is fruity. These two extremes are perfectly balanced in the mouth.

By the way, where does the Bar's name come from? If Dry bar echoes prohibition, 1862 refers to the first mixology book written by Jerry Thomas, that year.

Tiki Volcano Bar

The best Rum Bar in Madrid, without a doubt! Open since April 2023, Tiki Volcano is a Tiki temple located in the north of the Spanish capital. The decor and music immerse us in this incomparable Caribbean atmosphere. The couple managing the bar, Miguel and Julia, are truly passionate: the bar's light fixtures were salvaged from the very first Tiki bar in Madrid, opened in... 1961.

Behind the counter stands a wall of rum. There's a lot of Ron in Spain, but in this bar, there's everything: a lot of English-speaking rums, clairins, Jamaicans, some French rums as well, and also vintages from the 1960s. It takes several evenings to explore the menu!

We take you along for the Beachcomber's Julep mixed with rum from Barbados and Jamaica, honey, lime juice, orange and grenadine, chili, bitters, and mint. Just that! This Julep twist offers a well-balanced dry cocktail with a slight kick. A very nice introduction.

We also tasted the Mai Tai Iberico! Constructed from "rum of the peninsula" i.e., Spanish Ron, lime, orange, triple sec, and ratafia, this rum is both sweet and enjoyable.

We also tested for you, the El Hijo de Manuela, prepared from Rhum from Martinique, cane honey, grapefruit, ginger beer, and a touch of pure cane juice rum from Mexico. It's fruity, fresh, and spicy, in other words, it's very good.

The ambiance, the aesthetics of the place, the passion of the owners, and the quality of the cocktails all contribute to making the Tiki Volcano Bar our favorite!

Baton Rouge

A French name that comes straight from across the Atlantic to land in Madrid, just like that. The room is therefore naturally lit in red. The sound is rock, rhythm and jazz, blues. The menu is rich, classified by spirit. Salted popcorn is offered for snacking.

On the shelves, it's very much Ron: Brugal, Matusalem, Santa Teresa, Abuelo, Botran, Havana Club, Diplomatico (And again Matusalem behind). Added to this are Plantation, Mount Gay, English Harbour, Eldorado and Myer’s, by the way present in many bars in Madrid. Clairin is also present. The cocktails are sophisticated, as evidenced by the First Love.

Mixed with Ron Havana three years, Campari, violet cherry, and peach liqueur, it offers dry notes with a hint of bitterness, supported by the sweetness of the peach. The bartender takes great care in preparing his cocktails. One really feels the elegance of the cocktail in this bar.

Santa Maria Cocteleria

We conclude with a dive into Madrid's Speak easy: dark and elegant, bartenders in vest and tie. The atmosphere is meticulously crafted. Overall, we are in the upscale neighborhoods of Madrid. The menu is dense.

We try for you a Tropical Citrus. A simple and effective cocktail: cachaça, clairin, Cuban rum, pineapple cordial, coconut syrup, lime juice, orange bitters. It's a fresh, tangy, fruity drink, quite sweet thanks to the coconut syrup. Feel free to ask for two more drops of bitters if needed.

The Media Combination is also worth tasting: Cuban rum, vermouth, triple sec. The cocktail is red in color with an eighth of a burnt orange for decoration. What balance around bitterness! Neither too much nor too little. This bar also exhibits a lot of delicacy in the preparation of the cocktail, like a ceremony that goes from order to sip. It's very enjoyable to watch. The lightness of the gesture gives an impression of ease.
