For the N°2 edition of Calvados & Rum barrels, we offer you a surprising alliance between the fuited and pastry notes of Calvados and the aromas of sugar cane that have made the reputation of the distilleries located on the islands of Trinidad and Tobago.

Development
The apples are mixed, crushed and pressed. The apple juice ferments completely to give the cider to be distilled. The double distillation takes place six months after the cider fermentation process. The first distillation of the cider gives the small water at 30% vol. and it is the second distillation, that of the small water, that gives the Calvados.
Breeding
6 years minimum. In 400-litre toasted oak barrels, 25% of which are new. Finished for a minimum of 5 months in 220l barrels containing rum.

Nose : Gourmand, fin, complexe. Notes de canne à sucre soulignées par des jolis arômes de pommes cuites.
Palate : Attaque franche, bouche puissante soutenue par des arômes de pommes rôties et d’amandes fraiches, finale longue et persistante. Arômes de sucre vergeoise légèrement poivrés et pâtissiers.
