Vulcao
Like the great Jamaican aroma and high esters, it is distilled in pot still after a long fermentation that gives it intense complexity and aromatic power. Like fruit brandies, it is rested for months, even years in dames-jeannes to improve.
Three endemic cane varieties give a unique typicality to rum Vulcão is totally natural (no use of yeast) and lasts about ten days (against 48 hours for rums from the French West Indies).
Vulcão is produced on the volcanic island of San Antão. Its name (Vulcão = the volcano) is a tribute to this rich volcanic land and this grandiose relief that collects water from the clouds to allow sugar cane to flourish at a latitude identical to that of the Sahara.

Cabo Verde is undoubtedly one of the first cradles of rum. Long before the West Indies, cane was grown and distilled there. Prior to rum or cachaça, in Cabo Verde, cane brandy took the name Grogue.
