"Perched at 4m high, the Bar Dans les Arbres is a place in the heart of the park of Château des Creissauds offering innovative, fresh cocktails with seasonal fruits and aromatic herbs from its garden located at the foot of the tree. "

This blend comes from 4 distilleries in Santo Antão (3 from Tarrafal and 1 from Ribeira da Cruz). Made from red cane juice and striped cane. The fermentation lasted about ten days, to fix an average and distilled in small Pot Still with a capacity of 90L to 120L (wooden head + copper head). This raw Alambic Pot Still allows you to discover the soul of Cape Verdean tradition. Grogue de Tarafal + Ribera Da Cruz 45.9% Brut d'Alambic 100% Pot Still (wood head + copper head), distillation spring 2019, bottled in June 2020. Red cane and striped cane juice, spontaneous indigenous yeast, without cold filtration, natural color. The different grogues have been carefully selected on the island of Santo Antão (3 from Tarrafal and 1 from Ribeira da Cruz).

The assembly was carried out by Mr. Guillaume Ferroni, no less!

Our tasting notes for Rum 45.9 Still raw x Bar in the trees

Nose : Une crêpe copieusement saupoudrée de sucre et noyée de jus de citron jaune, ensuite beaucoup de végétal mais difficile à décrypter (choux fleur, artichaut, haricot vert, écossage de petit pois), petit carré de sucre, olive verte en saumure...

Palate : Très veloutée et opulente, c’est très gras, olive noire, bonbon poire Williams, poire, pomme au four, du coing et grains de blé soufflés.

Finish : Particulièrement longue, elle s’éteint sur des notes acétiques et le bon fruit présent en bouche.
