It is the conjunction of all the qualities of natural rum that prompted us to engage in aging in oak barrels arranged in our cellar in Tarrafal. After its distillation in 2017, the white rum was kept for 14 months in Bordeaux barrels (having previously contained Gaillac wine) to give this velha grogue.

This type of ageing, well known in the West Indies, gives it roundness and aromas; because the heat in the tropics allows rums to improve in contact with oak, gaining aromas of caramel, vanilla, exotic fruits, as well as woody notes that enrich the range of flavors. Prolonging the contact of this rum with the wood of the barrels for several more years should allow it to reach rare flavors, and deserve the name of old rum.
