It is therefore one of the oldest organic productions in the Cognac region, which has about sixty organic farms today (out of about 5,000!), some of which are very small. This cognac was aged in the small old cellar on clay of the farm, whose walls were semi-buried. The barrels could not be removed with the brandy because the door was condemned. It was therefore necessary to enter through the window and pump this lot into a cistern, which was done in the presence of a judicial officer. Being labeled by ECOCERT, we are now able to offer it to you as fifteen years of aging have left it, after a last reduction to water carried out in April 2011 in our cellars.
Our tasting notes for 2001 Fins Bois BIO
Nose : Un beau Fins Bois de treize ans d’âge avec ses notes gourmandes de fruits frais et d’agrumes. Au nez, notes de peau de pêche, abricots.
Palate : la fraîcheur et la naturalité de ce cognac sont saisissantes. On retrouve ces notes fruitées, mais elles sont prolongées par des arômes plus complexes, comme ceux d’un bouquet de fleurs séchées oublié sur une table une journée d’été.
Finish : La finale amplifie ces notes florales (jonquille, narcisse), vite recouverte par des notes plus évidentes de raisins, de zeste d’orange et d’épices fraiches.
