Passionate about bio-diversity and traditions, not hesitating to pass for originals in the eyes of their neighbors, they vinified their wines with indigenous yeasts, aged them on lees, and until their retirement distilled their production by means of a small still heated over a wood fire.
Our tasting notes for 12 years Borderies
Nose : u nez, des notes à la fois minérales et rances, avec une touche florale, narcisse, jonquille. Il y a de l’amplitude, de légères notes cirées et tertiaires émergent.
Palate : En bouche, l’attaque est vive, franche, le côté minéral des Borderies s’exprime pleinement, avec même un côté pierre à fusil. De la puissance aromatique, mais bien équilibrée, il n’y a ni brûlure ni piqûre.
Finish : La finale est longue, le côté pâtissier de la jeunesse a disparu. Très gourmand. Un beau cognac.
