Chateau Montifaud VS

Older than the minimum aging required by regulations, this VS cognac sets the tone for what can be found in the Château Montifaud range: Notes of vine flowers and fresh fruit (pear and apple). Powerful but round, supple and very soft. This cognac provides a lot of pleasure with a beautiful freshness.

Grape variety: Ugni-blanc mainly
Vineyard & Terroir: Sustainable cultivation of the vineyard, limestone soil typical of the Petite Champagne cru Harvest: Maturity control; The grapes are pressed within 30 minutes after harvest to prevent oxidation and thus preserve optimal quality
Pressing: 3 small capacity pneumatic presses (50hl) for quick filling without risk of oxidation
Fermentation: Control of fermentation temperatures (maximum 26°C to preserve all aromas), and storage of wines on lees for perfect conservation without the addition of SO2
Artisanal distillation: White wine is distilled with fine lees very slowly; It thus develops all its roundness and concentrates the floral character of our cognacs. The "cut" is made at the tasting only
Aging: This blend has aged 10 to 12 months in new barrels and then many years in "roux" barrels (French oak from Limousin) in our own cellars
Reduction: Slow (5 degrees every 2/3 months maximum) thanks to a unique process Filtration: Very gentle to preserve a maximum of aromas
