César Martí has mastered the art of ageing and assembling aguardientes. Aguardientes are particularly aromatic Cuban cane brandies, produced from molasses distilled at 75% vol. (alcohol content). Aged in white oak barrels previously used for whisky aging, the aguardientes are then blended with light Cuban rum, distilled at 95% vol., and aged a second time.
César Marti experiments with different types of aguardiente ageing, in different environments and barrels . His latest experience led him to create the first edition of Eminente Gran Reserva.

Eminente Gran Reserva Editon N°1 is a 10-year-old Cuban rum with a three-month ageing in French oak barrels. This type of finish brings woody and floral notes such as orange blossom or sandalwood. This first edition of Gran Reserva is made of aguardientes aged in unusual conditions: in a dry cellar, where water evaporates faster than alcohol. This process explains the final alcohol content of 43.5% vol for Eminente Gran Reserva Editon N°1, which is higher than the average for Cuban rums.

Nose : Le nez s’ouvre sur un arôme de café fraîchement torréfié pour laisser place à des notes plus douces de confiture de lait, d’amande grillée et de cacao.

Palate : Elle dégage des arômes fumés de vanille, de café et de raspadura, le sucre de canne non raffiné. Des notes épicées de gingembre et de poivre du Sichuan, avec un léger goût de pruneau, viennent alors tapisser le palais.

Eminente de Cuba

Eminente is a new Cuban rum, made in the heart of an island that its inhabitants nickname "Isla del Cocodrilo", its unusual shape evoking that of its endemic crocodile. Imagined by César Martí, younger Maestro Ronero (Master Rum Maker), Eminente is a rich and structured rum drawing its inspiration from the Cuban cane eaux-de-vie of the nineteenth century, characterized by their aromatic complexity.
