The Experimentals Series Grape Eau de vie 2021, made at Domaine Mestépès, celebrates the Baco grape variety in its purest form. After careful distillation, it spent 2 years in a demijohn enriched with pieces of oak burned over a wood fire, revealing deep and complex aromas.
A rich and festive aromatic profile
This eau-de-vie offers notes reminiscent of a Christmas feast: melting vanilla, candied chestnuts, fruit tarts and intense woody nuances. On the palate, dark chocolate, spices and candied fruit intertwine, creating a warm and comforting experience. The long and spicy finish is a tribute to the pleasures of the table.

Nose : Vanilla fudge, spun sugar, chocolate pot, lemon drizzle cake, orange posset with rhubarb and clove compote, pear and cinnamon tart, marron glacé, jelly beans, Mirabelle plum, peaches, overripe apples, chai tea, chicken and mushroom soup, plasticine, dunna
Palate : Milk chocolate buttons, dark chocolate , dark chocolate truffles and rose and violet creams, plus spiced hot chocolate, vanilla latte, dunnage, petrichor, frangipane, cheese soufflé with quince jelly, fig chutney, roast beef with red wine gravy and horser
Finish : Medium cooked steak rubbed with dry spices (star anise, mace, paprika and white pepper) on a bed of sage mashed potato with wholegrain mustard.
