Five Hundred Cuts is an authentic traditional rum, spiced artisanal.

Very dry, its color is natural. Molasses is fermented for seven days with wine yeast. It is then distilled in the two homemade ironing stills to release notes of tropical fruits and brown berries (blackcurrant, sloe).

Part of the rum produced in this way is used as a base for maceration with different ingredients (Tonka bean, cinnamon, ginger, spices). The other is redistilled with orange zest, green cardamom, Sichuan pepper and cloves. The two new rums are blended and enhanced with a little muscovado sugar (8g/l).

Five Hundred Cuts owes its name to the work of Elisabeth Blackwell, an herbalist from Aberdeen who wrote a treatise on botany published in 1734 with 500 original plates (500 cuts) drawn by her own hand. Lizzy is considered to be the first spice girl.
