This second bottling The Whisky Jury from the South Pacific Distillery in Fiji has an impressive 15 years of ageing. Distilled in 2009, this rum has gone through more than a decade in oak barrels, a period during which the tropical climate of Fiji has accelerated the exchanges between the wood and the spirit, concentrating the aromas and developing a remarkable complexity.

The maturity of a great Fijian rum

The nose is deep and bewitching : dried fruit, toffee, supple leather, blond tobacco and cocoa. The palate is masterfully full, with layers of burnt caramel, walnuts, prunes, warm spices and ancient oak. The texture is oily and velvety, the finish endless with notes of liquorice and precious woods. A meditation rum that rivals the greatest old rums in the Caribbean.
