Expédition Gin Canada Vintage 2019

To get the ball rolling, Baptiste Gissinger chose Canada with a gin with boreal, saline and forest flavours. Travelling the roads of Eastern Canada with his travel still , in his vehicle transformed into a motorhome, our adventurer essentially fed on what he caught and gathered.

All this cannot be improvised, there is a lot of research and reading beforehand to know how to locate and identify plants, dry them... Baptiste started with the coast of Nova Scotia and then went to Newfoundland where he spent a month collecting 25 kg of juniper berries (Juniperus Horizontalis and Juniperus Chinensis) crouched in the cold... He then continued on to Labrador to collect pine cones, branches, bark and sap. Back in Quebec, he picked sweet clover (vanilla from Quebec), wild chamomile (which smells like pineapple when crushed), dry tree moss, and Labrador tea harvested in the spring (floral honey flavours) and fall (toasted notes). That's a hundred kilos of plants and botanicals.

Baptiste has collaborated with Cassis Monna & Filles, an estate based on the Île d'Orléans, renowned for its blackcurrant wine. From this highly concentrated wine base, he then proceeded to distill with all the ingredients. The result? An eau-de-vie, more than a gin, wild and very natural, dry with iodine touches and a beautiful sensation of fruity honey on the tongue. To be enjoyed as it is, after letting it come to its senses in the glass for about ten minutes. Huge.

Expédition Gin

Expedition Gin is a unique project created by Baptiste Gissinger, which should last about ten years. The main idea is to travel through four countries for each of the six continents (North America, South America, Africa, Europe, Asia and Oceania), plus Antarctica, and to find and pick the local wild plants with which will be made 25 gins of terroirs, produced only once in very small quantities (from 500 to 750 bottles).
