Our tasting notes for Vintage 2000 Fut de Sauternes

Nose : puissant, riche. L’affinage en fût de Sauternes impose d’emblée ses notes de fruits sucrés (abricot) et de miel de tilleul. À ce stade, le rhum laisse la place au vin et plus particulièrement aux notes boisées du chêne neuf dans lequel il a vieilli.

Palate : à la fois ferme et pleine de douceur. À son tour, elle laisse le vin de Sauternes s’exprimer pleinement. Des fruits confits (prune) et secs (pistache) procurent beaucoup de suavité au milieu de bouche.

Finish : longue, gourmande. Elle hausse encore le niveau de la dégustation en épurant chacune de ses saveurs. Des abricots côtoient des kiwis, des parfums de rose poivrée se mêlent à la fleur d’oranger.
