Since 1887, the Bologne distillery has been located on a unique terroir between the sea and the mountains. The velvety and fruity style of Bologne rums can be explained by the magic that takes place between our volcanic terroir, the iodized air, the spring water, the exposure to the sunset of our plantation and our varieties of cane.

This unique alchemy allows us to sublimate the expression of each variety by planting only the highest quality, whose aromatic potential best expresses the typicity of the rums Bologne.

In a perpetual concern for quality, Bologne has chosen the plot management of his estate, which alone guarantees a perfect match between the terroir and the chosen variety. This is the only way to harvest with maximum richness (sugar content): our canes are cut at their optimum point of ripeness, immediately transported to the distillery to be crushed, closed and distilled. Among these varieties, Bologne is the only distillery in Guadeloupe that continues to grow black cane. This variety, now forgotten by distillers because of its low yield, is now cultivated only by Bologne for its exceptional aromatic potential: it expresses a "concentrate" of cane, an ultra-aromatic essence, which is now used in the blends of all rums Bologne. As soon as they are extracted, they already have tropical fruit aromas that are more powerful and delicate than any other variety of cane.

The La Coulisse plot is one of the oldest plots to have belonged to the Domaine de Bologne. Covering more than four hectares, it is also one of the largest in terms of surface area. This rather atypical name is actually inspired by the very ingenuity of this place. The La Coulisse dwelling was then one of the oldest sugar factories in Bologne and was distinguished by its slide or "Coulisse" used to transport the canes directly from the plot to the mill. As it was 130 years ago, this single-vineyard cuvée is designed and made in the same way as it was in the past. The cutting of the black cane belonging to this historic plot is done by hand during sunny days and requires a know-how that only the most seasoned cane cutters malrich. Most of them work from generation to generation in the fields and know the estate by heart.

Bologne applies a very precise low-temperature distillation style which favours, thanks in particular to our copper column (Creole column), the expression of the terroir and this variety of cane. For more than 18 months, this single-vineyard cuvée entered a maturation phase during which favourable evaporation, consultation and slow oxygenation occurred, both of which contributed to a perfect refinement for this exceptional rum.
