Bologne Confidential Brut de barrel

Since 1887, the Bologne distillery has been located on the slopes of the Soufriére volcano, west of Guadeloupe, on the shores of the Caribbean Sea. The unique exposure of this terroir, between the sea and the mountains, gives our sugar cane an incredible richness that is ultimately found in our rums.

From the meeting of these two elements, which give it its atypical character, a great rum was born with aromas recognized by all for its depth and exuberance. In search of excellence, the Maltre de Chai selects some of the most beautiful eaux-de-vie dormant in our cellars by creating "Les Confidentiels", a collection of some rare and precious old rums. This ultra-confidential, very limited and numbered edition represents the very quintessence of Bologne. Reserved for collectors and lovers of great rums, only the luckiest will have the opportunity to taste the first brut de füt of our house which continues its vast program of bottling exceptional rums. One of the fundamental characteristics of Bologne rums is their remarkable ability to age. A perpetual challenge to time, they age by expressing this effect of terroir that makes them more and more complex and subtle. The management of the estate is fully in line with the capacity of the terroir to produce great old rums for ageing over the years.

Distillation is carried out in a copper column, which produces a refined and aromatic rum. It is aged exclusively in France oak barrel, because unlike the barrels of other origins, they alone avoid producing these persistent woody notes during aging, they allow on the contrary, an evolution towards more delicate woody vanilla notes. The proportion of new oak is deliberately limited so that the wood does not mask, once again, the subtlety of our old rum, and that it restores with finesse all the purity of the aromatic range of our canes. Ageing takes place on the estate, in our ageing cellars, at the foot of the Soufriére volcano. They have been kept at a constant humidity and temperature, ideal for rum, so that it can flourish and assert its special identity.
