Demarara, which tends towards the Jamaican side, is very English and whisky, with a floral nose and full of tones of plants, wet cereal grains... a wheat field in mid-spring after a rainstorm, for example. Gum, liquorice and aromas of lacquer and wax at the end, cloud the nose of a cautious taster. At the palace, he strikes and retreats like a guerrilla in the forest. Paprika, ginger and strong spices kick off a series of exotic and metallic tones. It is a case in which one can say: rum without a country, Scottish rum.
