Demerara Vertical 03-04 Bottled 2017
Second bottling of our Demerara vertical blend.
We like blending because as we grow older, it's like watching our children grow, shaping them to reflect our own concept of beauty, balance and elegance.
That's why, like expert alchemists, we agonise over mixing, dividing and adding… Dear connoisseurs, this is the result of our considerable labours. Demerara that tends towards Jamaica, very British and very “whiskyish” with a floral nose and lots of plant tones, or rather, wet cereal grains… a wheat field in the middle of spring, for example, after a downpour. Rubber, liquorice and aromas of lacquer and wax at the end round it off, confusing the nose of a careful drinker. On the palate, it strikes and then retreats like a guerilla fighter in the forest. Paprika, ginger and strong spices kick off a succession of exotic and metallic tones.
This is one case where we can say: a Rum without a homeland, a Scottish Rum.
