This Demerara Vertical, in this second edition, is a blend of two barrels, one 2003 and one 2004, blended and then left to rest. As with its predecessor, we have strived to create a complex rum worthy of the utmost respect. It has an iron character, with a structure worthy of a Cognac vintage. The round nose flirts with thyme and grilled juniper.
The palate reveals a rich palette of nuances... A pastry shop in the middle of the
Excitement before a wedding banquet: meringues, peanut butter and toast. We are proud of ourselves and especially of Scotland, which helps us, as always, to get the most out of Caribbean spirits.
