Founded in 1999 by Bernard and Rosemary Walsh, the Walsh Whiskey Distillery is based in Carlow, in the south-east of Ireland. Equipped with three copper Forsyths stills , it practices the characteristic triple distillation of Irish whiskey, a process that gives the distillate a distinctive sweetness and purity.
A 10-year-old, triple-distilled single malt
The 10-year-old The Irishman Single Malt is made entirely from malted barley, triple distilled and then aged for 10 years in American bourbon barrels and Spanish sherry casks. This double maturation gives it a complex profile: the nose combines stone fruit, honey and vanilla with spicy touches. On the palate, the texture is silky and the fruitiness generous — peach, apricot, apple — with a soft and woody finish. The box includes two tasting glasses, ideal for a gift.
Our tasting notes for
Nose : Nez exubérant de fruits mûrs, pêche et abricot avec une touche d’ananas. Egalement floral (fleur d’oranger) et herbacé (coriandre), vanillé et fruits secs (amande grillée). Le second nez se révèle plus épicé.
Palate : Douce, onctueuse. Belle présence de crème vanillée et d’orge maltée, d’abricot sec et de chocolat au lait. Une pointe de chêne et de noix de coco lui donne une belle structure.
Finish : La finale se prolonge sur l'orge maltée et le caractère boisé.

The day the entrepreneurial couple opened their distillery, Royal Oak (County Carlow, south-west Dublin), the work of a lifetime. Let's take a step back. When Bernard Walsh and his wife decided to launch their own brand in 1999, Irish whiskey was not doing well. Only three distilleries are in operation, Middleton and Cooley in Northern Ireland and Bushmills in Northern Ireland.
