In 2016, he produced the first organic Irish whiskey and more recently, like the greatest winemakers, he decided to distill a whisky from biodynamically grown cereals. Made from organic barley from six farms, this version is the result of blending first-fill bourbon barrels (42%), new American oak barrels (17%), French oak barrels (23%) and barrels containing natural sweet wine (18%). To write that malted barley is at the heart of the tasting is an understatement. Indeed, whether it is dominant or much more withdrawn, it is always present to the point of taking on rustic tones that highlight particularly well the work of the men who gave birth to it.

Barley, the source of the complex aromas of Single Malts, is influenced by the soil on which it grows. By the soil that nourishes its roots, by the microclimate thanks to which it develops, by its terroir. This truth, long underestimated, is at the heart of the Waterford project, initiated in the eponymous Irish city, by the famous Mark Reynier. Inspired by the greatest winemakers in the world, Waterford tirelessly transposes to Single Malt the same intellectual approach, the same methodology and the same rigor.
