Distilled in small copper stills after a long fermentation, Plantation Jamaïca Millésime 2002 illustrates vigor and intensity. This rum has been softened, enriched and tamed in the cellars of Maison Ferrand in Charente (France).

Long fermentation and pot still is the equation that has contributed to Jamaica's centuries-old reputation and powerful, assertive rums. Pineapple, mango and citrus give it its gluttony while the spices and a chiseled plant register make it a rare and racy rum.

Fermentation : Plummer: 5 days, Wedderburn: 5 days, high esters: 2 weeks

Distillation : 2002, ironing (Potstill)

Tropical Aging: eleven years in Bourbon barrels, Jamaica Continental Aging, Ageing: two years in Pierre Ferrand barrels, Château de Bonbonnet, France
