The intention of the Cellar Master is to highlight the typicity of these terroirs in a perfect balance, thanks to the richness and power of molasses distillation in stills associated with the finesse and lightness of the sugar cane distillation in columns.

The selected rums have mainly aged up to 8 years in American white oak barrels. The aging takes place in their terroirs of origin, taking advantage of the warmth and hygrometry specific to the Caribbean islands that offer the future rum, by a unique oxidation, an excellent maturity as well as a high concentration of aromas.
The different batches of aged rum travel across the ocean to France and then matured separately for 12 months, in more than 50 French oak barrels located on the banks of the Charente, which, depending on their age, size, and cognacs previously contained, will give each batch a particular typicality.

This maturation barrel by barrel makes it possible to provide the cellar master with a wide variety of aromatic profiles, which he will then be able to assemble to give birth to a harmonious rum, both powerful, fruity and unctuous. The Rum Season Reserve is then gradually reduced to 43.5%; without added sugar.
