This peat-free version is distinguished by yeasts that promote the emergence of delicately fruity flavors and flavors. An invitation to dive, literally, inside a tank in full fermentation, its aromatic and gustatory palette is based at first on its deeply malted character. Then, over the course of the tasting, delicious green sequences, floral, gourmet or fruity, intimately intertwined with each other, evoke in a striking way a cinematographic fade.

The distillery produces a whole range of malts allowing the group's master blender to practice his art: sherry & sweet, woody & vanillic, fruity & estery. Indeed, we seek here to produce different profiles of single malts, not or slightly peat, from the fruitiest to the most spicy, thanks in particular to a wide variety of yeasts. To accentuate the effect, long fermentations are carried out before distillation. The whiskey is then put in barrels that have contained either sherry or bourbon and even in new American oak barrels.
