After they’ve been soften a first time in wooden casks from 5000 to 10 000 liters, the original rums from this cuvee are aged in barrels which can contain less than 650 liters.
In a first phase, the rums are aging in unused French oak barrels in order to get a tannic structure with woody notes.
In the course of time, they’ll be transferred in older and older barrels to favor the aromas’ aging evolution and the shading of the structure.
A part of the aging is realized in 195 liters barrels made of American oak.
The reduction of the alcohol degree to 45% is made all along the aging thanks to the accumulation of more rum.
Transfer and assembled a year before they are bottled, the rums from this cuvee have aged during 6 to 8 years and in soft wooden barrels during 12 to 24 months.
