J.Bally, a pioneer of ageing in Martinique

Founded in 1917 by Jacques Bally, a visionary engineer, the J.Bally house was one of the first to have systematized the aging of Martinique agricultural rum in oak barrels. Located in Le Carbet, the distillery is also famous for its iconic pyramidal bottle, custom-designed by Saint-Gobain.

Ten years of tropical maturation

This 2005 vintage was distilled in a Creole column from pure cane juice, then aged for 10 years in oak barrels in the tropical climate of Martinique, where natural evaporation — the angels' share — concentrates and complexifies the aromas. Bottled at 43°, it has a deep amber colour and a deep nose combining dark chocolate, dried fruit, toffee and fine wood. On the palate, the texture is silky and full, carried by notes of cocoa, plum and sweet spices, with a long and elegant finish.
