Neisson Profile 105 (old packaging)

Rums aged in wood are classically produced with the help of used bourbon barrels. But for this cuvée, the Neisson distillery turned to World Cooperage for the acquisition of new barrels. Numerous tests were carried out with oaks of different origins and with various toasting profiles.

225-litre fine-grained barrels, dried for 36 months, whose staves are made up of equal parts French and American oak, were selected. Toast profile n°105, whose characteristics are exclusive to Neisson has been retained.

A first run of a white rum, for 4 months, reduced the tannins and bitterness of the new barrels. Ageing began on 23 February 2015 in 15 barrels. In October 2016, 6 barrels were sent to the account aged in wood and unloaded to a 2000 liter cask in order to market them as cask strength under this name.
