Trois Rivières Double wood

Double Wood is an agricultural rum, aged in wood. After fermentation in open vats and distillation in a Creole column, this rum spends 7 months in American barrels and then 9 months in small French barrels that have contained whisky. Its relative youth places it halfway between a white rum and an old rum, it retains the freshness of the cane but develops a certain roundness.

The double maturation brings it a beautiful structure. In the mouth, it is fatty and supple and opens with notes of spices and hot sugar. In cocktails it works wonderfully in twists of classics like Manhattan or Old Fashioned.
