Paranubes Rum Caña Criolla
A rum rooted in the terroir of Oaxaca
Located in the Sierra Mazateca mountains, the Paranubes distillery, directed by José Luis Carrera, promotes an artisanal approach focused on local cane and traditional methods. This cuvée honors the Caña Criolla variety, one of the most widespread in the region. Naturally rich in sugar and able to remain in the field for several months after maturity, it is an ideal raw material for the production of agricultural rum with character.
Natural fermentation and traditional distillation
Paranubes Rum - Caña Criolla is made from fresh cane juice fermented for 24 hours with indigenous yeasts and without the addition of water. The single distillation takes about nine hours in a hybrid copper still combining a pot still and a six-tray column. Different cuts (85°, 80°, 65°, 20° and 5°) are then blended before bottling at 54% vol., without dilution, in order to preserve all the intensity of the distillate.
Flavour profile
This expression reveals marked savory notes, accompanied by aromas of very ripe tropical fruits. The nose is also distinguished by a herbaceous and peppery character, the signature of rums made from fresh cane juice and natural fermentations.
