A family history in the heart of the cloud forest
In the Santa Maria Tlalixtac region, the brothers Axel, William, Isidoro and Rommel Krassel Peralta continue the work started by their grandfather Max in the 1930s. The sugar cane, grown organically at an altitude of more than 700 meters, is harvested by hand before being processed on a single estate. The natural fermentation, lasting 7 to 10 days, precedes distillation on a continuous still designed and manufactured by the Krassel family, an artisanal approach that gives this rum a unique identity.
Tasting notes
The nose reveals notes of damp earth, green moss, thyme, smoked caramel and freshly cut cane. On the palate, a delicate salinity accompanies aromas of honeydew melon, dates, dehydrated fruit and a balanced minerality, offering a precise and persistent aromatic profile appreciated by lovers of authentic rums.
