El Destilado Rum Wild Fermented Oaxaca
At the head of the distillery, Issodoro Krassel, 72, who has been passionately making Rum since the age of 12, is now accompanied by his four 4 sons. The eldest of the family, Rommel Krassel, is a self-taught engineer and creator of a very special still used exclusively for the elaboration of this Rum. This homemade steel still with a column of 8 trays is the best kept secret of this distillery, and photos of it are not allowed. The cane is harvested manually and then crushed using a motor mill, called trapiche. The fermentation is natural, in the open air for 120 hours (5 days) in stainless steel tanks. After distillation, the Rum is bottled without filtration. Before 1983 and the construction of the first road that connects their small village to the rest of the region, the Krassels owned a Cessna aircraft to transport and market their Rum. As part of their independent bottling project for agave spirits, Michael Sager and Marcis Dzelzainis are travelling to Oaxaca in search of producers. During a conversation with a maestro mezcalero, the two partners hear about the Krassel family. Curious about his know-how and his Rum, they decide to go to meet him. Marcis and Michael, two experts in the world of wine and sea bass, attach paramount importance to the notion of terroir this typical Rum of the mountains of Oaxaca gives a new dimension to the category of White Rums. It allows both the realization of cocktails and a pure tasting.
