FRANCISCO "PANCHO" FERNANDEZ

He worked for 3 years to launch the Zafra 21 Master Reserve. This rum is a tribute to what Pancho has cultivated throughout his career as a Master Rum Maker.

Raw material

  • Hand-harvested Panamanian sugar cane. It is reputed to be one of the best thanks to the abundance of rain and the volcanic terroir.
  • The harvest lasts from January to May.

Distillation method

  • Fermentation and processing of very high quality molasses.
  • Distillation in 95% columns.

Aging

  • After distillation, the product is reduced to 75% before the aging phase.
  • Barrelled into 210 litre oak barrels used for the production of Bourbon.
  • The product is reduced once again to 49%.
  • Long ageing in the cellar under the control of the "Maestro Ronero" for 21 years, until the bottling. At this point, Zafra is reduced to 40%.

Recognized worldwide "Maestro Ronero", "Master Rum" he is the producer of Rum Zafra. Pancho has worked in the rum industry for over 50 years. Born in Cuba, he became the Havana Club's Master Ronero during the 60s and 70s.
