She also grows her own yeast, which gives her rums their uniqueness. The rums of this small batch have aged in two stages, in aciens barrels of American white oak Bourbon to give more structure to this spirit.

Delicate woody aromas supported by vanilla and tropical notes from the Bourbon barrel, then a slight touch of leaves and lime. Cinnamon and nutmeg on the palate, finish on the rest of orange, tobacco and green pepper.
