Sister Isles Dark Pedro Ximénez is not cold filtered in order to maintain an optimal taste quality. Left in the hands of our master winemakers, the Sister Isles rums are aged slowly and at high altitudes in the monastery's cellar located in Ribera del Duero, Spain.

Sister Isles Rum, a story that began more than 500 years ago, in exactly the same place it continues today. Since 1486 in the Douro Valley, there is an old monastery where Dominican monks reside. History says that Christopher Columbus came to this monastery before the departure of his conquest of the new world.
