Our tasting notes for Vintage 2000 - Single Cask

Nose : Capiteux, profond. Les notes d’hydrocarbure et médicinales inhérentes à Caroni sont présentes dès le premier nez. Elles le sont d’autant plus qu’à l’aération, ces notes terpéniques s’accentuent.

Palate : Puissante, vive. Son attaque est une copie conforme du nez.C’est-à-dire qu’elle s’appuie sur une minéralité à fleur de peau. D’ailleurs,des zestes d’oranges et de citrons verts lui procurent à la fois beaucoupde fraîcheur et d’élan.

Finish : longue, dynamique. Elle s’emploie à affiner chaque note de la palette gustative. Ce travail porte ses fruits car, désormais, elle va à l’essentiel et retrouve ainsi ses racines. La canne à sucre estextraordinairement retranscrite.
