It lasts about 48 hours, then it is left to rest for several days in order to improve the development of aromas before distillation in modern stills with multiple and continuous columns. This 2003 vintage was first aged in Trinidad in highly toasted Bourbon barrels and then re-aged in first-fill rum barrels in our European cellar, giving a rich dark colour.
