Cachaça Thoquino

At the time of Portuguese colonization in the 15th century, the organized cultivation of sugar cane developed and with it the elaboration of cachaça.

Initially consumed at the places of production, cachaça spread, according to migrations, throughout the country. Today, it is the national drink of Brazil. The THOMAZ DE AQUINO family distillery created in 1906 (GRUPO THOQUINO), has been producing cachaça for more than 100 years. It is based in SAO JOAO DA BARRA in the Campos region (State of Rio), a traditional place of sugar cane cultivation since 1532. This region benefits from exceptional land and privileged sunshine. It is one of the very few distilleries to have its own sugar cane plantations, which allows it to control production from the plantation and always have a consistent quality.

If you are a spirit enthusiast and enjoy discovering new flavors, then you must absolutely try cachaça Thoquino. This Brazilian spirit, made from sugarcane, stands out for its quality and unique aroma. In this explanation, we will take you on a journey to the heart of this traditional beverage to better understand its characteristics, its production process, and some tips for tasting it.

What is cachaça Thoquino?

Cachaça Thoquino is a Brazilian eau de vie brand produced from the fermentation and distillation of sugarcane juice. Sometimes referred to as aguardente de cana, it has been an integral part of Brazilian culture and traditions for several centuries, especially in the regions of Minas Gerais and Rio de Janeiro. It is primarily used in the preparation of the famous Caipirinha cocktail, but it can also be enjoyed on its own or with other ingredients.

The different varieties of cachaças

There are different types of cachaças, some more artisanal while others are more industrial. Cachaça Thoquino is considered an artisanal eau de vie, which distinguishes it from more common and often less qualitative brands. The production of this spirit follows a traditional process, with proven methods established for dozens of years. Here are some unique characteristics of cachaça Thoquino:

  • Carefully selected sugarcane: The quality of the sugarcane used plays a crucial role in achieving a quality cachaça. For Thoquino, the sugarcane comes from a specific terroir located in the south of the state of Rio de Janeiro.
  • A mastered fermentation process: The fermentation of sugarcane juice is an essential element in the production of cachaça. This stage can be influenced by various factors such as temperature, time, and the yeasts used. Cachaça Thoquino has well-defined specifics regarding this crucial phase.
  • Aging in wooden barrels: The aging of cachaça Thoquino takes place in barrels of different types of wood, notably oak and amburana, which gives it distinct and unique aromas.

The making of cachaça Thoquino

The production of cachaça Thoquino follows a precise process that contributes to creating an exceptionally high-quality spirit.

Extraction of sugarcane juice

It all starts with the harvesting of the sugarcane, which is then pressed to extract the juice. This juice, rich in natural sugars, serves as the base for the in-house fermentation. The selection of sugarcane and its origin are key elements in producing a quality cachaça.

Fermentation: the crucial step

The obtained sugarcane juice undergoes a fermentation process, usually in stainless steel or concrete vats. This step involves converting the sugars in the sugarcane juice into alcohol through the action of yeasts. The duration of fermentation varies according to the method used and can last for several days.

Distillation: the birth of the spirit

After fermentation, the fermented juice is distilled to separate the alcohol from other elements (water, impurities...). The artisanal and traditional character of cachaça Thoquino is evident in this step as well: distillation must be carefully monitored to ensure flawless bottling.

Aging: the final touch

Finally, cachaça Thoquino is aged in specific wooden barrels, which give it an amber color and particular aromas. This aging also helps to soften the spirit and release undesirable compounds, resulting in a high-quality final product.
