A pioneering distillery in Guadeloupe

Founded in the seventeenth century, the Bologne distillery is distinguished by its historical roots and its attachment to tradition. Located on the volcanic slopes of La Soufrière, it grows exceptional cane on rich and complex soils. The "Les Expérientiels" range illustrates the house's esprit of innovation, with creations where experimentation is at the service of taste.

An atypical and advanced creation

Bologne - Les Expérientiels No1, ADN 2016 is made from 100% black cane, harvested in 2016 from volcanic ferisols. The rum first rested for a year in stainless steel vats, before ageing in ex-French oak cognac barrels, then a singular finish in refermented barrels by adding acetobacter acétii. This rare process gives the rum a marked depth and organoleptic complexity.

A profoundly original taste profile

Dense and expressive, it reveals a subtle interplay between candied fruit (plum, cherry), precious wood and nuances of kirsch. Umami notes, such as tamari or balsamic sauce, blend into a rich, almost oily texture, bringing remarkable length and aromatic tension. A unique expression of Guadeloupean agricultural rum , between sensory research and technical mastery.
