It is with emotion that we present to you a little rarity that arrived a few days ago at Excellence Rhum. It is a bottle of agricultural white rum Depaz, distilled in the 1980s. From a time when bottles of white rums were still, for some, protected by a capsule - thus not designed to be sealed again - and not by a screw cap, this bottle has crossed the decades in good condition, with a label that has notably retained its whiteness.

Let's turn back time

We offer you a journey through time at the Depaz distillery. The AOC Martinique does not yet exist. Each house relies on its unique reputation to move forward. The Depaz distillery has existed for over sixty years.

In the mid-1980s, it operates a 40-hectare estate of cultivated sugarcane and another 60 hectares are planted for the following years. Additionally, the estate features crops of avocados and bananas.

Four mills, one of which comes from the former Courville distillery that closed a few years earlier, crush 4,000 tons of sugarcane. Fermentation lasts 48 hours and takes place in 16 tanks with a capacity of 340,000 liters each. Distillation is carried out in two columns. The distillery operates using steam and electricity, through a generator set and a hydraulic turbine.

At that time, Depaz produces white rum at 50 and 55%, wood-aged rum at 50% and 55%, and aged rum at 45%. Aging takes place in American barrels.
