Rhum Bologne : past innovations, future innovations

Interview with Madame Maeva Mécorvin-Flandrina, Marketing and Communication Manager at Rhum Bologne

Hello, thank you for granting us an interview. To better understand what the Bologne distillery represents, can you give us the annual rum production figures? How many barrels does the distillery have?

Hello and thank you for letting us share more about what the Bologne distillery represents. Today, Bologne is primarily a living heritage company of Guadeloupe, hence its EPV label (Entreprise du Patrimoine Vivant highlighting both traditional craftsmanship and innovation in our work methods. In our last harvest, we reached a production of 1.9 million liters of rum. Our rum aging also takes place on the estate, along with every production step, and we now have a collection of over 2000 oak barrels.

What is the share of local consumption and exports?

The share of local consumption currently accounts for 60% of our sales, with 40% for exports. Our spiritourism activity allows us to introduce this local product to vacationers.

What do you think has been the evolution of rhum Bologne in the last 15 years?

Over the past 15 years, the Bologne house has really stepped up its game while staying true to its historic identity. Around 10 years ago, we took on two challenges: one for premium white rum and the other for single-variety rum. The first batch, Black Cane, marked the beginning of a story. When it comes to aging our rums, our cellar master collaborated closely with a cooperage to create aged rum profiles that resonate with Bologne's essence. There used to be more amber rums for a long time, but now our aged range is perfectly complemented with VO, VSOP, XO, and some exceptional batches like Vintage or single cask offerings.

What did using the Black Cane represent for Rhum Bologne, both in terms of image and aromatic possibilities?

The Black Cane stands out for its very intense aromatic potential, but it's also a cane that initially has a low yield and some fragility in the fields. It used to be found in our blends, kind of like a secret ingredient, for example in the Classic White blend, nicknamed "the yellow jersey." Then we decided to work on it as a single varietal, a choice that in a way forced us to excel in our farming methods because today we have a much better yield even on this variety, and the Black Cane blends have become very iconic for Bologne. When it comes to the aromatic aspect, what's just perfect with a blend like the Black Cane, for example, is that it's an illustration of what a agricultural rum represents: pure sugar cane juice undergoing fermentation. Right from the nose, anyone tasting agricultural rum will understand the difference, with the impression of being in the middle of a cane field, given how pronounced the sweetness is. On the palate, the intense and spicy, even peppery notes bring complexity to the tasting. Bologne's 100% Black Cane collection has become essential in the realm of agricultural rums.

At the 2024 Agricultural General Competition at the Agriculture Show, Bologne won two beautiful gold medals, one for the Bologne New Old and the other for the Bologne XO. Can you please present to us these two references both technically and in terms of taste?

It was indeed a great harvest of medals, and we are very proud of it because it's the result of the whole team's effort. The 'New Old' vintage is a perfect blend of tradition and innovation. This aged rum is matured first in French oak ex-cognac casks, then finished in ex-bourbon barrels. This New Old, a new style of aged rum at 4 years old, with 43% alcohol content, offers a smooth start, with a nice roundness and notes on the palate reminiscent of old-fashioned crème brûlée. Our XO Bologne vintage is a regular on the podium. It exudes elegance, with a beautiful mahogany hue, a flavorful and complex palate, and a long finish expressing melted wood. This blend aged in French oak ex-cognac barrels for 7 to 10 years has all the qualities of a truly exceptional aged rum.

Bologne is currently conducting research and tests on aged rums. What can you tell us about this?

Our research focuses more on the agricultural side, how to best evolve while taking care of our 150 hectares of sugarcane, as well as on the production side. We will especially focus on one of these stages, fermentation. This year, we will release references that will showcase the research and reflections carried out by our team and especially our cellar master, François-Xavier Sobczak. We were hoping to release Project X by the end of the year.

More broadly, what new things can we expect this year?

In addition to the wines from Project X that I just talked about, we are going to be able to share with you some new Confidential, this long-awaited range will come back with two versions.
