The Cañero Finition Sauternes is distinguished by its unique aging process: after maturing in ex-bourbon barrels, this rum benefits from a 9-month finish in Sauternes Grand Cru Classé barrels, from the renowned Château d'Arche. Summum / Cañero is a tribute to the Dominican peasants who have been cultivating and harvesting sugar cane for generations. It is in this spirit and in the respect of Cuban-Dominican traditions that our Cuban rum master Juan Alberto Alvarez has developed Cañero, rum of Spanish tradition but distilled from the pure sugar cane juice grown in the Dominican Republic, and aged rigorously according to the traditional Spanish method of solera.
