Distillerie de Paris Panela
The cane used comes from Colombia, in an area close to the capital Bogotá. After cooking the sugar cane juice at a low temperature, the syrup is finally obtained after a long fermentation of about 8 weeks. The heart of the distillate is placed in new 100-litre oak barrels and aged according to the dynamic ageing process for one year. The distillate is then reduced to Volvic water until it reaches 43° in slow reduction over one year.

The Distillerie de Paris was born on January 22, 2015 in the 10th arrondissement of Paris. Nicolas and Sébastien Julhès are already producing a very beautiful variety of spirits of incredible precision in their Holstein still.
