A demanding Cambodian terroir and carefully selected raw materials

At the heart of Ampov’s DNA: an endemic cane variety grown by small producers, without chemicals and harvested by hand, with a single-varietal approach and first-press juice, pressed as soon as the cane arrives at the distillery. The house also works with a highly aromatic local molasses sourced from a sugar mill in Northern Cambodia—exploring the full spectrum of Cambodian rum, from fresh cane juice to molasses.

Long fermentations and rare aromatic signatures

Ampov stands out through dedicated fermentation protocols, fully controlled and designed to unlock uncommon aromatic intensity. On molasses, fermentation is conducted without acidification, using tailored processes. Some releases go even further, with spontaneous “wild” fermentations that can exceed 12 days—delivering a freer, more vibrant character and heightened complexity. This approach makes Ampov a bold house, both technical and creative, sought after by enthusiasts of distinctive artisanal rums.

Copper pot still distillation and tropical aging in the “Sabay” warehouse

Distillation is carried out on copper pot stills to preserve texture and depth in the distillate. White rums may then be rested for several weeks in glass demijohns (Dame-Jeanne) to gain roundness while retaining energy. Aged and matured expressions rest in the tropical “Sabay” warehouse at elevated temperatures: tropical aging that accelerates wood interaction and shapes broader, spicier, more expressive profiles. The house favors a strong single-cask philosophy, where each barrel tells its own story.

Hand-bottled, 100% natural

True to an uncompromising philosophy, Ampov champions 100% natural rums: no added sugar, no additives, no coloring, and no dynamic chill filtration. Bottling is done by hand at the distillery in a sustainable mindset, with wax sealing and a strong vintage culture. The result: characterful, precise rums with a clear aromatic signature—where authenticity comes before artifice.

Fresh cane juice white rums: double-distilled in copper pot stills, released at 42% and 55% ABV (including a Silver Medal at Rhum Fest 2025 for one of the whites).
Amber / ESB rums: molasses-based, double-distilled, with sought-after finishes (Ex Cognac Cask at 40% and 45% ABV—one rated 88/100 by Gault & Millau—and an Amber Ex Porto Tawny Cask at 45% ABV).
